Pan-Seared Sea Bass with White Wine & Olive Oil Sauce

Crispy sea bass cooked in rich olive oil and finished with a zesty white wine reduction. Elegant and simple Mediterranean flavor.


Ingredients

  • 2 sea bass fillets (skin-on)
  • 3 tbsp olive oil
  • 1/2 cup dry white wine
  • 1 shallot, finely chopped
  • Juice of 1/2 lemon
  • Salt and pepper
  • Fresh dill or parsley (optional)

Preparation Steps

  1. Pat fish dry and season with salt and pepper.
  2. Heat 2 tbsp olive oil in a skillet over medium heat.
  3. Place sea bass skin-side down and cook for 4–5 minutes until crispy. Flip and cook another 2 minutes.
  4. Remove fish and keep warm.
  5. In the same pan, add remaining olive oil and sauté shallot until translucent.
  6. Add white wine and lemon juice. Scrape the pan and simmer until reduced by half.
  7. Spoon sauce over fish, garnish with dill or parsley, and serve.
